for the pie filling you need
two cooking apples
4 table spoons of brown sugar
few drops of lemon juice
table spoon granulated sugar
tea spoon cinnamon powder
two table spoons of flour
2 table spoons water
pastry (either ready made or home made) go here for recipe
to make filling
in a pan, add the chopped apples (i cut mine into small cubes)
then add the brown sugar, lemon juice and water and stir on full heat for 5 minutes, then mix the flour granulated sugar, and cinnamon in bowl and add a bit at time while stirring, turn down to a low heat and stir for 2 more minutes, then leave to simmer. i them prepared the pasty, i pre-heated the oven at 180c and rolled out some short crust pastry and used a mug to cut it into a circles and put it in a cupcake tin (i used a silicone cup cake mould), then i took the apple mixture off the heat, i put the filling in with a spoon, then cut small lids and put them on top of the pies and pinched it to the pastry cups to hold it together, and brushed the pastry with some milk. then i baked them for 20 minutes
they taste amazing especially when they are still warm and are perfect portion sized
