for the sponge i cooked it in jars, i lined them with baking paper.
i made a normal sponge mix
225g/8oz butter or margarine, softened at room temperature
225g/8oz caster sugar
4 medium eggs
2 tsp strawberry extract
225g/8oz self raising flour
preheat the oven at 200c
mix the butter and sugar together, then beat the egg and whisk in. then sift in the flour and fold in. then i separated it into two bowls and added pink colouring one darker than the other and spooned it in alternating colours into the jars
then place on middle shelf in oven for 15 min’s
then once done remove from the jars and peel of paper and leave on a rack to cool
once cool cut off the tops so that they are flat and spread raspberry jam and raspberry marshmallow fluff and sandwich two together then its ready for icing
for the bow you need roll out fondant, i used blue food colouring and kneaded it in, so that i would have blue and white stripes
roll out the icing quite thin, then use either a cake strip cutter or a rotary blade and a ruler and cut the fondant into strips then place the strips together in alternating colours and then roll over gently with the rolling pin to mould the stripes together, take one of the striped bits and fold in a circle then pinch it in the middle and then place your finger in the each side to open it up then cut one strip in half for the two bow tassel’s and place them together and then add the bow on top, then cut one of the strips into a small piece and wrap it around the middle to hide the joins
to cover the sponge i rolled out pink royal icing and the used a heart cutter and added the hearts on upside down to look like ruffles
