recipe
1 cup plain flour
1 tea spoon cinnamon
1 tsp ginger
1 tsp baking soda
pinch of salt
1/2 cup butter
1/3 cup brown sugar
1/3 cup granulated sugar
1 egg
1 tsp vanilla extract
1 grated carrot
chopped nuts
cream cream fondant
2 table spoons cream cheese
1 1/2 cup powdered sugar
two will need two bowls.
in one sift the flour and add the salt, baking soda, ginger and cinnamon, in another bowl cream butter with the sugar and add the egg and mix togehter then add the carrot and nuts and vanilla once combined mix in the dry ingredients from the other bowl. this cookie mix is very moist so flour you hands and make carrot shapes and put them on to a lined baking tray. make them smaller than you want as these cookies rise to give them a cake consistency,
bake at 180c for 15 to 20 minutes then place them on a cooling wrack.
for the frosting mix powdered sugar with cream cheese, keep adding sugar until it forms dough. once the cookies are cooled cover them with the fondant, for the greens i added some herbs but you could use candy laces or fondant
