recipe
for the biscuits
3 cups flour
1 cup butter
1 cup sugar
1 egg
1 teaspoon baking powder
vanilla extract
dried lavender
purple food colouring
for the lemon cream
the zest and juice of 1 lemon
butter
powdered sugar
preheat your oven at 180c/350f
in a mixing bowl cream the butter and sugar together, then add the egg and whisk in,
add a few drops of vanilla extract and a hand full of dried lavender and the purple colouring and mix well,
sift the baking powder and flour together and add to the mixture and knead to form a dough. on a flour dusted surface roll out and then cut to desired shape, i used this cookie stamp and then used a circle scalloped edge cutter. line a baking tray with baking paper and put the cookies on and then place in the freezer for 5 mins (this dough is perfect of sugar cookies as it holds it shape putting it in the freezer helps) then put into the oven for 10-12 mins,
for the lemon cream grate the zest of the lemon, then squeeze the juice out, add a cup of butter in a bowl with it and then add about 2 and a half cups of powdered sugar and mix well. add more sugar if its to runny then put into a piping bag and put into the fridge to chill. once the cookies are done place them on a cooling rack, once cold you can then pipe on the filling and sandwich another cookie on top.
