recipe
the crust
1 cup flour
1/3 cup powdered sugar
pinch of salt
1/2 cup butter
filling
5 ounce cream cheese
1/2 cup granulated sugar
2 eggs beaten
zest of 1 lemon
juice of 2 lemons
i used a square spring form tin so i had to double the crust ingredients to fill the tin,
first i greased the tin and set it to the side.
in a large mixing bowl mix all of the crust ingredients together to form a wet dough and then spread it in to the tin and pull it up the sides with the back of a spoon or spatula.
prick holes with a fork and put it in the freezer for 10/15 Min’s. preheat the oven at 425f or 220c and then place the crust on the middle self and cook for 10 minutes.
if is puffed up just flatten it down. turn the oven down to 350f or 180c.
for the filling mix the cream cheese with the sugar until soft then beat the eggs and add them one at a time. lastly add the lemon juice and zest and whisk together. pour into the tart base and put back in the oven for10-15 mins.
once cooked leave to cool. you can dust it with powdered sugar.
i decorated it with fondant flowers to see the daffodil tutorial see here
for the hydrangea i just used a hydrangea cuter with pink fondant and added some green luster dust.
i rolled out some green fondant for the stems

Your lemon tarte looks and sounds delicious! Thanks for the recipe …. I'll definitely try it since my two favourite things are lemon and shortbread. 🙂
