    banana oat muffins with coconut cream cheese frosting

    recipe
    2 and 1/4 cup flour
    2 tsp baking power
    1/2 tsp salt
    2 ripe bananas
    1/4 cup butter
    1/2 cup caster sugar
    1/2 cup brown sugar
    2 eggs
    1 tsp vanilla
    1/2 cup milk
    1/2 cup oats
    1/2 cup chopped nuts
     
    preheat oven at 190c
    in a bowl mix flour, baking powder and salt and set aside.
    in another bowl mash the bananas until they are almost pureed and set aside.
    either in a stand mixer or with a hand whisk, cream the butter and sugar until pale, then add the eggs one at a time,
    add the milk and the vanilla and continue mixing, then add the flour and stir in with a spatula, don’t over mix, now add the mashed bananas, nuts and oats and stir in and add to muffin pan.
    bake for 20/25 minutes.

     to make the coconut cream cheese, just mix 200g cream cheese, 400g icing sugar and 2 table spoons of coconut milk, then sprinkle some coconut flakes on top.
