this was my first time at making jam and i was suprized how easy it was, i looked at lots of recipes for jam and then came up with this one, i added gelatine to make it set like shop bought jam, but you dont need this. also allot of recipes i found used granulated sugar rather than jam sugar so if you prefer to use that then you can.
in a heavy pan, add the water, sugar and crushed blackberries and cherries, and add the lemon juice
and grated zest, stir until the sugar has melted, place the sheet gelatin in about an half an inch of water and set aside, turn the heat down and use a hand blender and blend the fruit, i also used a potato masher, then cut the ends off the vanilla pod and score it up the middle and put it in the pan, after the gelatin has been soaking for at least 5 minutes add it to the pan and stir. leave it on a low heat for 5 minutes an stir it again, it should start thickening up.
once done pour it into jars and rest it in a bowl of ice water for 30 minutes before putting it in the fridge.
