you will need some Madeleine moulds i got mine from wholeport.com
recipe
2 eggs
3/4 teaspoon vanilla extract
pinch of salt
55g butter
1/3 cup sugar
1/2 cup flour
1 teaspoon baking powder
first you need to grease the moulds with butter then sift some flour into them and shake out the excess.
preheat your oven at 190c (375f)
melt the butter, i did this in the microwave, and set aside to cool.
in a bowl mix the eggs, sugar salt and vanilla until pale and thick, sift the flour and baking powder together in a separate bowl then add to the mixture a quarter at a time and gently fold in with a spatula. then add the butter and fold quickly into the mixture and add it in to the moulds.
bake for 12-15 minutes, them revert on to a baking tray and gently remove them from the moulds and dust with sugar while still hot.
