recipe
either one fresh pear, or some tinned pears
250g self raising flour
1 teaspoon baking powder
45g sugar
1 tbsp sunflower oil, (plus extra for frying)
100ml milk
1 egg
elderflower cordial
icing sugar
in a bowl, sift the flour, sugar and baking powder and put to one side.
in a separate bowl whisk the egg, milk and oil together.
take the pear and grate it with a fine grater (like a Parmesan grater)
in to a cup then, pour it through a sift into a bowl to remove any juice (keep the juice for the icing,
add the milk/egg mixture to the flour and add the grated pear and knead into a dough, add extra flour if needed so its the consistency that you can roll out.
flour your work surface and roll out the dough so that its half an inch thick and cut it into circles, then cut a smaller circle out of the centre.
in a frying pan heat oil until it reaches 350f and fry the doughnuts for a few minutes on each side and then transfer on to a paper towel (or you can use a deep fat fryer)
leave to cool.
while you are waiting for them to cool make the icing.
in the bowl with the juice from the pears and some elderflower cordial, i used about a teaspoon. and then add the icing sugar i used about 250g / 300g, mix together, then once the doughnuts are cool dip them into the icing and leave to set.
