    blueberry mojito popsicles

     i was going to make blueberry mojito cocktails, but i decided to make them into Popsicles instead, you can leave out the white rum and have them as a refreshing treat to cool you down on a warm day

     recipe
    for the blueberry syrup
    1 cup of blueberries
    1 cup sugar
    1 cup water
    fresh mint
    limes
    1 pint of soda water
    2 shots of white rum
    in a jug mix the soda water and white rum.
    to make the blueberry syrup, in a saucepan add the water and sugar and stir over a medium heat until the sugar dissolves and forms a syrup, then in a blender add the blueberries and the syrup and blend. then pour through a sift in to a bottle.
    in a Popsicle mould add some blueberry syrup, fresh mint and a slice of lime and add some of the soda water then freeze, then top up with some more blueberry syrup and mint, then freeze again and finish with some more soda and another slice of lime.

      Quick question, why do you suggest filling partway, freezing, filling more, freezing, etc multiple times? My guess is so the lime/mint doesn't all float to the top?
