i love icecream, its so easy to make,
even if you don’t have an ice cream maker.
recipe
1 cup of cherries
1 half cup of dried coconut
200ml milk
250ml double cream
50g caster sugar
1 vanilla pod
in a pan add the milk with the sugar, and heat on a low medium heat, score the vanilla pod and add to the pan, bring to the boil then remove from the heat. leave until cold,
in a blender puree the cherries, use a food processor to make the coconut into a fine meal,
add the cooled milk mixture to the cream and mix,
the add the coconut. if you have an ice cream maker, add the cream mixture and then slowly add the cherry puree to ribbon it into the cream as it freezes.
if you don’t have a ice cream maker, then whip the cream first and then, the add the milk mixture and coconut and put it in a freezer safe container and put in the freezer, remove and stir every half an
hour for 2 hours. After the first hour add the cherry if you want it ribbon through the coconut ice cream. If not add it all together to start with and freeze.
serve after at least 4 hours
