i used this recipe from the cookbook love bake nourish
it is made without flour. instead it is made with polenta and ground almonds, similar to Italian style cakes.
i bought some polenta recently and when i saw this recipe i decided to try it.
preheat the oven at 160c 310f
cream together the butter and sugar, until pale and fluffy, stir in the ground almonds and lavender and add the vanilla extract,
then add the eggs one at a time mixing to incorporate each one.
next fold in the lemon zest, juice and polenta, baking powder and honey and salt until combines.
grease a spring form tin a put the mixture in and level it out with a spatula.
bake for 45 minutes, or until it springs back to the touch.

Sound and looks good. I haven't been brave enough to cook with lavender but I do grow it. Maybe I can think outside the box and try it. I will let you know if I do.
The cake sounds so yummy!! Your photos are really beautiful!
What a pretty cake.
I have lavender growing in my garden and just started drying it – I'll have to try this out!
Thanks – have a great week!

Ooooh! We planted lavender in our herb garden this year for the first time, hoping to find something fun to do with it! This seems perfect 🙂 Pinning now, thanks for sharing!

Your cake looks so wonderful. I could use a piece right now with my coffee. Guess I'll have to get a scale and try this cake.
Now that is right up my alley!
Yum!
Thanks for sharing!

Pretty cake! Love love love lavender. I have a lavender honey that is absolutely TDF. I'm thinking of making some lavender sugar and lavender ice cream this summer, as my mother is positively swimming in it!
Thanks for sharing!
