    lemon thyme muffins

    these muffins have such a fresh flavor, what with the zing of the lemon mixed with fresh thyme.

    i may sound a bit weird having herbs in a sweet muffin but it actually goes togther really well.

     recipe
    125g self raising flour
    125g butter
    125g sugar
    2 eggs
    zest and juice of 1 lemon
    fresh thyme
     
    preheat the oven at 180c
    cream together the butter and sugar until pale, then add the eggs and whisk, next add the grated lemon zest and juice and fold in.
    sift in the flour and add the thyme and whisk again to combine.
    spoon batter in prepaired muffin tin and bake for 20-25 minutes.
    once cooked rest on a wire rck and brush some lemon juice on while they are still hot.
