to make the dough you will need
2 large potatoes
95g to start then add more until it forms a firm dough (about 1 and 1/4 cups)
50g ricotta
salt and pepper
1 egg
sprig of thyme
first you need to cook the potatoes until they are soft, then dig out the centres and mash, or use a potato ricer and leave to cool, (i pricked mine and cooked them in the microwave for several minutes)
once cooled put them in a bowl with the ricotta, flour and egg and add some salt and pepper and a sprig of thyme.
knead into a firm dough
(add the flour a 1/4 cup at a time until the dough is workable)
roll the dough into a rope shape and cut it into pieces
i used butter paddles to roll them up, if you don’t have these then use a fork
(these butter paddles where my great grandmothers)

Yes flour. I didn’t use this recipe on my stories though I used one tub of ricotta, 1 egg and about 1-2 cup to 3-4 cup pumpkin purée then I added half a cup of flour mixed it and added another half a cup and mixed it and then added a little until it was manageable (you don’t want to add too much flour so just add a little at a time) I’m doing to do a proper blog post on it soon
