the combination of beetroot and chocolate sounds a bit weird at first but they seem to go so well together,
the beetroot makes the dark chocolate brownies moist and seem to help break down the richness to make a sweet and wonderful treat,
if you tried one with out knowing that they had beetroot in i don’t think you would even know.
growing up i loved beetroot, i think maybe my obsession started because it was pink, i would have beetroot sandwiches for my packed lunch, which would turn the bread pink and everyone would think i was weird.
i have been wanting to try beetroot and chocolate together for a while, my partner doesn’t like beetroot, but even he liked them
recipe
250g cooked beetroot pureed
250g unsalted butter
250g dark chocolate (i used 70% cocoa)
3 eggs
250g caster sugar
pinch salt
150g self raising flour
preheat oven at 180c
put the butter and chocolate in a small pan and gently melt over a low heat, until smooth and melted, in a large bowl whisk the sugar and eggs together until thick then add the melted chocolate/butter mixture and beat together, sift in the flour and salt and fold it in, then fold in the pureed beetroot, (i chopped mine then put in in my food processor)
pour the mixture in to a lined cake pan and bake for 30 minutes

I'm pinning this so I can give it a try when we get beets in our veg box delivery. I'm never sure of what to do with them…have tried beet chips, but they've never been a huge success. Can't wait to try these brownies!
