if you have coconut flour then use that were it says ground coconut, i didn’t have that so i put some coconut in the food processor to chop it into a fine meal.
recipe
165g 3 1/4 cups butter
pinch of salt
75g 1/2 cup confectioners sugar
35g 1/4 cup ground almonds
35g 1/4 cup ground coconut
1 eggs
165g 1 and 1/2 cups plain flour
in a large bowl sift the confectioners sugar and cut up the butter and add it to the bowl and rub it together, then add the other ingredients and mix together and knead into a wet soft dough.
cover and place in the fridge for at least 2 hours,
preheat the oven to 160c
take the dough out of the fridge and roll out the dough and cut with a circle cutter.
i used a alphabet stamp and stamped the word noix de coco.
place them on a cookie sheet to and chill while the oven is heating up and then bake them for 15 minutes until they turn golden.
