    homemade english crumpets

     i love crumpets i have them ll the time for breakfast with butter on, i had never tried homemade ones until know, so when i saw this recipe in my cook book (paul hollywoods bread)
    i had to give them a try.

    recipe
    175g strong white flour
    175g plain flour
    14g fast action dried yeast
    1 tsp caster sugar
    350 ml warm milk
    150-200 ml tepid water
    1/2 tsp bicarbonate of soda
    1 tbs salt
    sunflower oil for cooking
    put both flours together in a bowl and mix in the yeast. in a jug dissolve the sugar in the warm milk, then pour onto the flour.
    using a wooden spoon beat until it makes a smooth wet batter.(about 3-4 minutes) cover the bowl with cling film and leave to rise for an hour.
    the mixture will rise, then begin to fall again, you will see the marks on the side of the bowl where the batter reached before it dropped.
    this indicates the yeast as created its carbon dioxide and is now exhausted. the gluten will have now developed sufficiently to give the crumpets structure and enable them to hold their shape.
    in a jug add the bicarbonate of soda and salt with 150g tepid water and mix in to the batter and stir until its evenly combined.
    then gradually add as much of the remaining 50ml of water as you need to get the thick dropping consistency.
    cover the bowl and leave to stand for 20 minutes. bubbles with form on the top of the batter.
    lightly grease a skillet or heavy based pan grease some crumpet rings (poached egg rings)
    then use a ladle to add the batter, fill the rings to just below the rings.
    cook on a low medium heat for 6-8 minutes.

    the bubbles will form, and pop like the photo, when it is done the holes with not fill up again with batter and stay open, you can help the cooking process along by popping the bubbles with a shape knife when they form
    flip over and cook the top for a minute.
    then they are done, serve right away
    or toast when you want them.

      These look uncommonly nummy, with just the right texture to hold lots of butter. I will pass the recipe onto Tired of Being Youngest, my daughter in culinary school who loves to bake.

      When I saw your photos I thought, those are the best looking English muffins I've ever seen! We love them at our house. Then I realized they were crumpets and I had to do some research. I see now there is a difference in English muffins and crumpets. I think I would prefer to use a batter recipe (Crumpets) versus the dough (Eng. muffin) so thanks for the recipe! Great photos!       I've never even thought about trying to make crumpets, I bet once you have home made the shop ones are a poor substitute. Next lazy weekend (hoping to have one of them one day soon) we will give these a go.
