i had some pastry left over from my slab pie so i decided to make these lemon tarts, i love adding herbs in lemon sweets, rosemary and lemon go together beautifully but thyme goes really well too.
i made little lemons with the left over pastry and put them in the oven on a piece of baking paper and baked them with the tart cases then placed them on top of the tarts once they were almost cooked.
for the pastry you will need
1 cup butter
2 and 1/2 cup plain flour
2 tbsp sugar
4 tbsp ice cold water
rub together the butter and flour, then add the sugar and water, by adding two tbsp to start then more if needed,
knead the dough until soft and workable and shape into 4 discs and wrap in cling film and put in the fridge for at least 20 minutes.
preheat the oven at 180c 350f
grease 4 small tart tins and add pastry and blind bake with some baking beans and cook for 10 minutes.
for the filling
1/4 cup flour
1/4 cup sugar
juice of 2 lemons
zest of 1 lemon
3 eggs
tsp finely chopped fresh rosemary
in a bowl combine the sugar, lemon juice and zest and add the egg and mix, then sift in the flour and mix well and add the rosemary,
then remove from oven and remove the baking beans and place back on the oven shelf and our in the filling and cook for 15minutes

How small do you chop the rosemary? It can be very "tough" so just checking.
Also, what is 180c in F degrees? If you don't know I am just being lazy, I can figure it out/look it up.
