i got some lychee’s that were marked down to half price, i love lychee’s and couldn’t decide whether to make a cake or some sorbet.
i had some strawberries which needed using so i decided to make a strawberry and lychee cake.
i put the pureed fruit right in to the sponge and added strawberry flavoured yogurt aswell.
recipe
200g self raising flour
125g sugar
125g butter
1 cup of shelled pureed lychee’s
1 cup of pureed strawberries
2 eggs
4 tbsp strawberry or plain yogurt
preheat the oven at 180c
in a mixing bowl cream together the butter and sugar until pale, then add the eggs and whisk.
in a blender puree the strawberries and lychee’s and pour through a sift into the mixing bowl, then mix in, add the flour and whisk, then whisk in the yogurt.
grease two small spring form cake tins and spoon in the mixture.
use a spatula to smooth the top down and bake for about 25 minutes.
once cooked leave to cool on a wire rack.
to prepair the butter cream add 250g butter, 500g powdered sugar and whisk then add a little pink colouring,
assemble the cake by sandwiching some cream and jam between each cake.
use a pallet knife and add the cream onto the cake and put in the fridge for 10 mins.
then add some more colouring to the cream and add it to the bottom of the cake so it blends with the lighter colour
