    mini black forest layer cakes

    cherries are in season at the moment in England which means i was able to get a massive punnet of them for a great price. i love black forest gateaux, so i made this layer cake version.
    i tend to associate it with Christmas rather than summer but as some of my readers are in Australia and celebrate Christmas in July i thought why not.

     recipe
    for chocolate
    sponge
    125g butter
    125g sugar
    125g flour
    2 eggs
    4 tbsp butter milk
    1/4 cup cocoa powder
    preheat oven at 180c
    cream together the butter and sugar until pale, then whisk in the egg and butter milk then add the cocoa powder and mix, sift in the flour and whisk until smooth,
    line a shallow baking dish (it needs to be large so you can cut circles out of it)
    then add the cake mixture and level out and bake for 25 minutes.
    leave to cool on a wire rack and then cut into 4 circles.
    (for an american equivalent to this recipe go here)
    to make cherry syrup
    1 cup cherries
    1/3 cup sugar
    3 tbsp water
    use a cherry pitter to remove the stones of the cherries and put in a pan with the sugar and water o a low heat.
    stir until sugar melts, mash the cherries slightly with a wooden spoon to release the juices and make a syrup. leave until it starts to bowl and then transfer into a bowl and leave to cool.
    to make the cream layer i whisked a carton of double cream with 1.4 cup of powdered sugar until it reached stiff peaks
    to assemble, slice the four circle of sponge to make 8 thin circles,
    take one layer and add some syrup, then add some cream then spoon on some of the cooked cherries and drizzle some more syrup on, then add the next layer of sponge, continue this so each cake has four layers of sponge.
    then cover the cake in cream.
    to decorate i used come cadbury chocolate fingers and pressed them into the cream then i added some fresh cherries on top and some more syrup.
    (put in the fridge for at least an hour to make the chocolate fingers stay in place)

     i think a traditional black forest gateaux would have alcohol in it, but I’m not to keep on alcohol in cakes so i didn’t use any.
