    peach and lavender pies and peach and lavender cooler

    i heard the saying peach pie for July and just had to make one, i love peaches, and they go together wonderfully with lavender, it you want you can leave that part out, i strained some of the juices to make a syrup for a icey cooler as well.
    this recipe make 4 small pies, or one large one.
    i used home made lavender extract rather than fresh lavender as i had it to hand, but fresh lavender can be used too.
     for the pastry you will need
    1 cup butter
    2 and 1/2 cup plain flour
     2 tbsp sugar
    4 tbsp ice cold water
    rub together the butter and flour, then add the sugar and water, by adding two tbsp to start then more if needed,
    knead the dough until soft and workable and shape into 4 discs and wrap in cling film and put in the fridge for at least 20 minutes.
    preheat the oven at 180c
    take out one disk of pastry and roll it out and place  in a greased mini tart tin, cut of the excess and then continue with the with the next 3.
    keep the excess for the lattice top,
    pierce the pastry with a fork and line with tin foil and add some baking beans or rice to weigh it down. bake like this for 10 minutes and then remove ready for filling,
     for the filling
    4 peaches peeled and chopped
     1/4 cup of water
    1/3 cup of sugar
    1 tbsp lavender or lavender extract
    over a low heat combine the ingredients until the sugar dissolves,
    then quickly blast the mixture in a blender to break it down and pour through a sift to separate some of the juice, and put the fruit back into the pan. keep the juice in a separate bowl, add a little back in to its not to dry, and simmer over a low heat. for 5 more minutes.
    spoon the mixture in to the prepaired tart cases and then roll out the left over pastry and cut in in thin strips and then place on top and brush on some egg yoke and bake for a further 10/15 minutes until the top is golden.
    for the cooler,
    add some of the juice that was left from the pie into a glass full of ice and top up with soda water, or ice water for a refreshing treat on a hot day.

      Yum — I have quite a bit of lavender growing now and love using it for edible and non-edible projects. Have never heard of combining the peaches with lavender but sure sounds like a winner!
