i decided to make a chocolate tart case for a change to add another flavor to this summer tart, The strawberry Mousse is so sweet that the bitterness of the chocolate breaks it up
recipe
1 and 1/4 cup flour
1/2 cup butter
1 tsp granulated sugar
1/4 cup coca powder
3 tbsp ice cold water
rub together the butter and sugar until it resembles bread crumbs, then add the sugar and sift in the flour and coca and mix, add two tbsp water and knead into a soft dough, add another tbsp if needed.
cover in cling film and refrigerate.
preheat the oven to 180c
line a baking tin, i used this rectangle one from wholeport.com place in the dough and add some foil and baking beans and blind cook for 15 minutes then leave to cool
to make mousse add 2 tsp of powdered gelatin in a dish with 2 tbsp boiling water,
in a pan heat the strawberry puree and then add the gelatin mix for a few minutes then leave to cool, once cooled combine the syrup with the cream.
once tart case has cooled add the mousse, then decorate with some strawberries and some syrup, and chill till firm.
