i saw these financier moulds and just had to get them i love to buy old baking equipment, i had never tried financiers before so i used the recipe from my laduree book but i changed it slightly as i always find there recipes yield way to much for just my partner and I.
recipe
140g confectioners sugar
35g self raising flour (cake flour)
45g butter
30g ground almonds
1 pinch of baking powder
3 egg whites
1 tbsp vanilla extract
butter flour for moulds
melt 1 and 1/2 tbsp butter and brush the moulds with it, refrigerate for 10 minutes then dust with flour, tip out any excess.
in a saucepan melt the butter and allow to colour over a medium heat until brown.
as soon as it turns a hazelnut colour dip the bottom of the saucepan in cold water to stop it from getting darker. allow to cool until lukewarm.
in a large bowl mix the confections sugar, flour and ground almonds, incorporate the baking powder. add the egg whites one by one, and incorporate slowly to avoid lumps stirring with a spatula. pour in vanilla and brown butter.
preheat the oven to 410f/210c
fill the prepared moulds 3/4 way to the top and bake for 6/8 minutes (longer depending on size of moulds)
until lightly golden.
remove from oven and leave to cool for 10 minute them remove from the moulds.

These look wonderful. You scared me for a minute saying you made adjustment to Laduree – then you just downsized I relaxed. That is one of my issues is too large of a recipe. I almost always halve when possible. Gorgeous financiers and gorgeous pictures.

I've been looking for this recipe for years! Once worked next door to a Swedish bakery where they called them Almond Boats, so searching for them under that name proved fruitless. A word to the wise before making these is that, once tasted, they're highly addictive. Perhaps it's better it took me years to find the recipe … thus saving me thousands of calories and hundreds of pounds! One of the best sweets I've ever tasted, so thanks much for sharing here.
