i love this time of year because i can go blackberry picking, my mum and i had planned to go out foraging at the field by her house, but then i realised i had some growing in my garden.
i used some red apples with them and adapted a lemon bar recipe to make the filling for the tarts. i decided to add some thyme in the pastry crust to add some extra flavor.
recipe
for crust
200g flour
110g butter
2tbsp ice cold water
finely chopped fresh thyme (1 teaspoon)
in a bowl rub together the flour and butter until it resembles bread crumbs, then add the thyme and combine together.
add the water and knead into a soft dough.
separate into 4 equal balls and wrap in cling film and put in the fridge for 10 minutes.
preheat oven at 180c
roll pastry out and place into small greased tart tins. prick bake with a fork and line with baking paper and baking beans and blind bake for 10 minutes.
remove from oven and remove baking beans.
for filling
2 apples
1 cup blackberries
60g sugar
35g flour
3 tbsp water
1 tbsp baking powder
3 eggs beaten
in a pan add 3 tbsp water and 60g sugar, and dissolve over low heat add the chopped apples and blackberries, Cook until soft then remove from the heat and let cool slightly.
place into a food processor and puree,
pour through a sift to remove any lumps and blackberry pips so you have a smooth puree and add 3 beaten eggs, 35g flour and 1 tbsp baking powder. mix together and then pour into tart cases and bake for 25 minutes.
i made the pastry blackberry stems and baked them on some baking paper and added them to the tarts afterwards.
