these cookies were so good, they are moist chocolate mouthfuls of greatness, i don’t want to over sell them but they were a big hit in my house, they taste like a cross between a brownie and a cookie. the mixture needs to be made the day before ideally so that it can firm up in the fridge.
recipe
175g plain chocolate
4 tbsp unsalted butter
175g plain flour
1/2tbsp baking powder
2 eggs
150g caster sugar
1 tbsp vanilla extract
icing sugar
in a microwave safe bowl add the chocolate and butter and melt, or use a double boiler, put to one side to cool.
add the eggs and sugar into a bowl and whisk until pale. add the chocolate mix and vanilla and continue to mix, then add the flour and mix well. the mixture will be like a thick cake batter. cover and refrigerate for at least two hours, i left mine over night.
preheat the oven to 160c
line two cookie trays with baking parchment,
fill and shallow bowl with icing sugar,
the cookie mixture will be firm (like a chocolate truffle consistency)
take a hand full and roll it into ball then roll it in the icing sugar to coat it, then place it on the tray and flatten it slightly.
continue this with the rest of the mixture and place in the fridge for 10 minutes.
bake for 12/15 minutes so its firm on the outside and soft on the inside.

I cannot tell you how excited I was to see this recipe (and of course pin it)! Years ago I became addicted to these at a local hospital cafeteria while visiting a friend in for an extended stay. I have seen a lots of recipes, but none looked right. I can tell, THIS IS IT!!
