i always find i have it hit and miss with macarons, they tend to crack on me, but after reading a peice shared by brave tart i found the task of making them was not as scary.
these turned out perfect, the basic macaron recipe can be changed to go with any flavour i decided to make earl grey flavoured macarons with nutella. i dont no why but it seemed to go together really well. if like me you have problems getting you macarons looking perfect dont worry they still taste great even if the crack. i was so happy that they didnt this time.
recipe
50g caster sugar
100g egg whites
110 almond meal
200g icing sugar
1/2 teaspoon salt
earl grey tea bag
nutella
in a food processor add the icing sugar and almonds and blend for 30-50 seconds until fine.
sift into a dish and set asside
in a mxing bowl whik the egg whites until foamy soft peaks for then add the sugar and salt and whisk until stiff glossy peaks form.
take a spatular and fold in the sifted almond/sugar mixture. the myth is to be gentle and fold slowly but this isnt true, dont be to gentle as you want to difflate the buttles by rubbing the mixture againt the bottom of the bowl when you are folding it.
dont over mix it, i would suggest reading this piece from brave tart it really helps learn about the methods and the probems you may have, go here
once you have the mixture pour into a piping bag fitted with a pain nozzel and pipe small circles onto parchment paper and then tap the bakng tray against the work top a few timesto pop any bubbles.
leave to sit for 15 minutes to form a skin. sprinkle over the dried earl grey tea.
preheat the oven to 140c and bake for 15 20 minutes

Hi Aimee, I have been reading to your blog for a few months now and am so impressed every time. Your photos are lovely and the entire blog has an elegant and sophisticated feel that you don't get from a lot of craft and recipe blogs. Your taste comes across as exceptionally refined. I do have one small exception to that impression however and simply wish to bring it to your attention. I have noticed that your writing is lacking in a proper understanding of grammar and spelling. From an artistic standpoint, the lack of capitalization or use of apostrophes can be excused as a style choice, however there are a few things that simply make you look uneducated such as confusing There, Their and They're; To, Two and Too; Know and No; Where and Were. Now from the comments you can see that to most people these aren't considerations, however, I figure that someone of your refinement may wish to present the best of herself to the world.
