in england we cant get graham crackers, and we dont eat smores!. so i had to make my own, i adapted the recipe from several i have seen.
recipe
1 1/4 cup all purpose flour
1/2 cup corm meal
1/2 cup rye flour or wholegrain flour
1/2 tsp salt
1/4 tsp baking soda
1/4 tsp baking powder
1/4 cup brown sugar
7 tbsp butter
1/4 cup honey
1/4 cup milk
vanilla extract
in a bowl combine the flours, sugar, salt and baking powder/soda, rub in the butter then add the ilk and honey and vanilla and mix together until a dough forms, tip out onto a floured surface and knead until a soft dough forms, then wrap in cling film and put in the fridge for 2 hours.
after two hours heat the oven to 350f/180c and roll out the dough into a large thin piece and use a pastry wheel to cut into to squares, then use the back of a knife to score down the middle and use a fork to make holes in the cracker so prevent it from rising.
bake for 12 minutes until golden,

They sound really nice. My hubby loves graham crackers and buys them every week,but as I love to bake I will certainly try these.
When I was growing up in England we used to get cream crackers which were the same as Sao's or graham crackers we get in Australia. It's a shame you can't get them now. 🙂

I actually love making s'mores from digestive biscuits, even more than regular graham crackers when I can find them in the stores here in the US. The chocolate melts so nicely 🙂 I am excited to try this recipe!
