    honey roasted peach and fresh mint icecream

    i got a punnet of peaches the other day and decided to make some icecream.
    i added mint to make it taste fresh, the combination went together really well.

    recipe
    2 cups cream
    1 cup skimmed milk
    1/2 cup sugar
    4 egg yolks
    vanilla pod
    3 large peaches
    hand full of mint
    honey
    preheat the oven to 180c
    chop up the peaches and put them on a baking tray and drizzled honey over the top, bake for 15 minutes.
    to make the ice cream base
    in a heavy pan add the cream, milk, sugar and egg yolks, and heat on a medium heat, stirring constantly.
    split a vanilla pod and remove the seeds and add them into the pan with some chopped mint,
    whisk until thick and coats the back of a spoon,
    let cool, pour through a sift into a bowl to remove the mint.
    once the peaches are out of the oven, and slightly cooled, place into a blender and puree,
    pour through a sift and stir into the cream mixture,
    pour into ice cream maker according to makers instructions.
    then pour into pan and freeze for at least 6 hours.
    if you don’t have an ice cream maker, remove from the freezer every half an hour for the first two hours and stir, then leave to freeze.

      Oh I adore fresh peach ice cream.

      Not sure how I feel about mint, but peach for the win! Thanks for this recipe.

      Hubs used to make ice cream all the time till we lent out our ice cream maker and haven't ever gotten it back……….hrm………..not good….may need to get another one. Not even sure who has it now – eldest daughter perhaps…..hrm………….
