I have an ice cream maker but this recipe means you wont need one, as you use a whisk to thicken the cream. it only uses 4 ingredients and tastes wonderful and it so easy to make.
The basic ice cream base consists of cream and condensed milk and usually vanilla extract then you can create any flavour you like, instead of vanilla extract i used homemade lavender extract that i made a while ago you need to make it a few weeks before you need it,
if you want to make your own extract for a future recipe, just add some lavender in a bottle and top it up with vodka and keep in a dark place, every couple of days give it a shake.
leave it for at least 2 weeks and then strain it to remove the lavender, the longer it is left the stronger it will taste.
1 tin of sweetened condensed milk
500ml double (heavy cream)
fresh blueberry puree (1 heaped cup of pureed blueberries blended and put through a sieve)
lavender extract
either in a stand mixer of with a hand held mixer whip the cream until its thick, then pour in the condensed milk and blueberry puree and continue mixing then add the lavender extract.
you can add fresh whole blueberries and dried lavender if you wish, i didn’t as i wanted it to be smooth.
pour the mixture into a 2 pound loaf tin and freeze for at least 6 hours
