these figs are caramelised and served with ricotta cheese and make a wonderful dessert
they are threaded on a sprig of Rosemary which infused while they are baking.
recipe
6 figs
1/3 cup sugar
3 woody sprigs of rosemary
balsamic or white wine vinegar
2 tbsp butter
2 tbsp water
preheat oven to 180c
in a oven proof pan dissolve the sugar with water and 2 tbsp balsamic or white wine vinegar. once dissolved stir in butter, remove from heat
remove the rosemary off of the stalks and pierce them through two of the figs and place in them pan, spoon some of the syrup on them bake for 15 minutes. serve warm with ricotta.
