these cupcakes were so tasty i found it hard to portray it with a photo, if you like cream cheese frosting then you will enjoy the mascapone butter cream i made for these.
recipe
for cakes
110g sugar
110g plain flour
110g butter
2 eggs
3 tbsp fresh single cream or milk
2 tbsp elderflower cordial
tbsp honey
1 tsp vanilla extract
1 tbs baking powder
pinch of salt
preheat the oven to 180c
in a bowl cream the sugar and butter until pale, then add the eggs and combine one at a time, then add the cream, honey and vanilla extract.
mix together the flour and baking soda/ salt and sift into the mixture, then mix to combine.
line a muffin tin with cake cases and fill them with the batter 3/4 to the top.
bake for 15 20 minutes until golden.
let cool
for the icing
200g mascapone
50g trex or butter
300g confectioners sugar
vanilla extract
in a bowl combine the trex and mascapone, then add the vanilla and sift in the confectioners sugar and whisk until thick and smooth. (you may need more confectioners sugar).
you can pipe it on or use a spatula, then drizzle honey over the top.

These look amazing I'm thinking of making them but have a question… the list of ingredients calls for 1 tablespoon of baking powder, however the instructions say to mix flour and baking soda. Which is it?
