i got these cookie cutters on etsy from a shop called printmeneer, i decided to make pies with them, i thought i would make a play on the words
i used pears that i picked from my grandmas garden.
to make the dough
1-¼ cups all-purpose flour
½ tsp salt
1 tbsp granulated sugar
1 tbsp ground ginger
½ cup unsalted butter, chilled and cut into cubes
4 tbsp ice water
for filling
four pears peeled and chopped
1/3 cup brown sugar
2 tbsp ginger
1 tbsp cinnamon
3 tbsp water
2 tbsp maple syrup
first make the dough
To make the crust, blend the flour, salt, ginger and sugar in a food processor until combined. Add the butter and process until the mixture is crumbly. With the processor running, slowly add the ice water, 1 tbsp at a time, until the dough just holds together, making sure not to over process. Remove the dough from the processor and roll into two balls; cover with plastic wrap and refrigerate for 1 hour.
in pan add the all the filling ingredients and stir until the sugar has dissolved then put the lid on a let cook for 10 minutes until the pears are soft then use a hand blender to puree slightly
preheat oven to 180c
lightly flour surface and remove dough from fridge, roll out and cut out the shapes.
egg wash the edges, then add the filling and add the top piece of the pie on and push the edges together, egg wash, then prick with a fork and bake for 15 minutes until brown.
