i thought it would be fun to make a carrot cake with the icing on the inside rather than the outside.
i used a canneles mould from wholeport.com
i adapted the recipe from a large carrot cake from my great british bake off cook book
recipe
2 eggs
85 ml light olive oil
60g light brown sugar
60g dark brown sugar
110g plain flour
1 1/2 teaspoon baking powder
1/2 tsp ground nutmeg
1 teaspoon ground cinnamon
1/4 teaspoon ground clove
35g walnut pieces
150g grated carrot
35g desiccated coconut
grated orange zest
preheat the oven to 180c
in a bowl add the eggs, oil and both sugars and using an electric whisk, mix until frothy about 3/4 minutes.
sift in the flour and baking soda and fold in gently, add the spices and fold in again until combined then add the carrots, walnuts (chopped up) and coconut and orange zest (i left orange out)
pour batter into moulds and bake for 20 minutes or until a skewer inserted comes out clean,
invert silicone mould on to wire cooling rack,
make the cream cheese icing
150g cream cheese
50g butter
400g icing sugar
whisk together
once the cakes are cooled, use a apple corer and remove the centres of each cake, pipe the icing in and put a piece of the sponge back on to keep the icing in,
then sift over some icing sugar to decorate.

Those little cakes are so completely perfect for a tea party – and so easy to keep fresh with the gooey bits INSIDE and not outside sticking to whatever means one keeps the fresh.
