these cookies have so much flavour, the buttery cookie had lime zest and coconut in and then they are filled with homemade lime curd.
i adapted a linzer biscuit recipe to make these zesty cookies.
my family said they were lovely and they all really enjoyed them.
recipe
for the cookies
220g unsalted butter
120g icing sugar
grated zest of 1 lime
2 egg yolks
300g plain flour
40g delicatessen coconut
i used a food processor for this as the cookie dough is really wet and sticky.
in a food processor cream together the butter and icing sugar then add the egg yolks.
then add the lime zest and vanilla extract. sift in the flour and process until it combines into a soft dough.
cover with cling film and put in the fridge for 1 to 2 hours at least so that it is firm enough to roll out,
during this time make the lime curd (recipe below)
preheat oven to 160c (for fan oven) or 180c for electric oven
heavily flour work surface and prepare two cookie sheets with baking paper.
roll out the dough and cut out into circles then use a small circle cutter to remove the centre circle from half of them. (like a jammy dodger)
then bake for 10-12 minutes until golden, sift with icing sugar.
to make the lime curd
4 limes
1/3 cup sugar
4 tbsp butter
2 eggs
2 egg yolks
grate the zest off all four limes, keep the zest of one lime back for later. then squeeze the juice all four and add it into a pan with the zest, with the sugar and egg yolks, eggs, butter and whisk together over a low heat, stir continuously until it thickens and coats the back of the spoon.
continue whisking off the heat and transfer into a cool dish so it doesn’t continue to cook.
let cool and refrigerate.
spoon into the centre of two cookies.
mix the remaining lime zest and sugar and sprinkle on top.
