this pink grapefruit curd is so easy to make, and it tastes great, I’m not that keen on grapefruit normally, but this tastes so refreshing.
recipe
1 cup of grapefruit juice
5 egg yolks
5 tbsp butter
1 tbsp grated zest
1/2 cup sugar
grate the zest to make about 1 tbsp.
squeeze the juice of the grapefruit and strain it through a sift to remove any pulp.
in a heavy pan, whisk together all the ingredients, keep whisking constantly over a medium heat until it thickens and coats the back of a spoon, this should be about 5-10 minutes.
ensure that it doesn’t boil.
pour into a jar and keep in the fridge for up to a week.

Oh my , never heard of this. I have made lemon curd a few times for my tea paries, but never even thought other citrus could work too.
