these Belgian biscuits are one of my favourites i love the spicy taste of them, and they make your house smell amazing when you bake them, i decided to make a butter cream and sandwich two together.
recipe
425g plain flour
1/4 teaspoon salt
1/4 tsp baking powder
4 tbsp ground cinnamon
2 tsp ground ginger
1/2 tsp ground cloves
1 tsp freshly grated nutmeg
200g light brown sugar
225g butter
1 egg
1 egg yolk
1/2 tsp vanilla extract
line two baking trays with baking parchment
put the flour, sugar, salt and spices into the bowl of the food processor, and pulse to combine, or if making by hand mix together in a bowl.
then add the butter and pulse until it resembles fine bread crumbs, or if making by hand rub the dry mixture together with the butter.
then add the egg and egg yolk and mix into a soft dough.
tip onto a floured surface and knead together.
cover with cling film and and refrigerate for at least two hours.

preheat the oven to 180c
roll out the dough and cut into circles and place on baking tray and place into the fridge for 10 minutes
bake for 13-15 minutes until they start to brown.
to make the cream
mix
half cup butter
3 tbsp maple syrup
1 cup icing sugar
2 tbsp cinnamon
mix together until thick then spoon between two of the cookies.
