these are not your usual cupcake,
they are a tiramasu inspired cake with mascapone butter cream, an honey roasted black figs.
i cut out the centre of the cakes and dipped them in some coffee syrup and then put it back in, so when you cut into the cake there is a coffee layer.
recipe
for sponge
110g sugar
110g butter
2 eggs
110g plain flour
1 1/2 tsp baking powder
3 tbsp milk
preheat the oven to 180c
in a bowl cream the butter and sugar together until pale and fluffy (about 3/4 minutes)
then add the eggs and whisk in one at a time.
sift in the flour and baking powder and whisk in, to loosen the mixture add the milk.
scoop the mixture in to muffin cases and bake for about 15/20 minutes until a knife inserted in comes out clean,
leave to cool
for the figs
slice the figs and place on a lined baking tray and drizzle with honey, bake in the oven (put in with the cup cakes) for 10 minutes.
for coffee syrup
1/3 cup boiling water
2 tsp instant coffee
3 tbsp brown sugar
1 tsp cocoa
stir together until coffee and sugar has dissolved leave in bowl.
use a small circle cutter and press it into the top centre of the cup cake, use a spoon to then remove the sponge and dip it in into the coffee syrup so it soaks up the mixture then place the sponge back into the centre of the cake.
to make the mascapone icing
200g mascapone
50g trex or butter
400g icing sugar
whisk together until thick and creamy
place in fridge for 10 minutes to firm it up slightly then use an ice cream scoop and put a scoop onto each cake and use a pallet knife to smooth out the icing and drizzle over some honey and add the figs.
