with it being pumpkin season this recipe is a great way to use up the left over pumpkin seeds,
it went down a treat with my family and didn’t last long before it had all been eaten.
recipe
250g salted butter
6 tbsp caramel from a 397g can of carnation caramel (keep reminder for topping)
50g (2oz) golden caster sugar
350g (12 oz) rolled oats
85g (3oz) self raising flour
topping
remaining caramel
50g (2oz) salted butter
25g (1oz)pumpkin seeds
50g (2oz) dried cranberries
25g (1 oz) chocolate chips
preheat the oven to 160c
grease and line a square cake tin
in a large pan melt the butter and 6 tbsp caramel and sugar, once melted tip in the flour and oats.
stir to completely cover all the mixture, then pour in to prepared tin,
use the back of a spoon and press the mixture into the tin firmly
bake for 40 minutes
let cool for 5 minutes, meanwhile
to make topping add the remaining caramel and 2 tbsp butter into a pan and stir until smooth
pour over the flab jack, let cool for 5 minutes
then sprinkle over the pumpkin seeds, cranberries and chocolate chips, use a sharp knife and slice into squares, one cooled put in the fridge
