i have seen allot of recipes mixing chocolate and pomegranate so i decided to make a pomegranate jewelled brownie. i made the usually brownie mix then stirred in some pomegranate seeds, then i sprinkled some more on top before serving. the red seeds look like gems.
recipe
180g plain flour
3tbsp cocoa powder
1/4 tsp salt
300g dark chocolate 70% cocoa
200g unsalted butter
150g caster sugar
220g brown sugar
4 eggs
1 teaspoon vanilla extract
seeds of 1 pomegranate
preheat the oven to 180c or 350f
line a square tin with greased parchment
sift flour, cocoa and salt together in a bowl and set aside.
in a bowl over a pan of water melt the butter and chocolate,
whisk in the sugar until dissolved.
add the eggs and whisk until thick and add the vanilla, sift the flour into the mixture and fold in,
add the pomegranate seeds and stir in,
pour into prepared tin and bake for 30/45 minutes until cooked through.
allow to cool completely before removing from pan and slicing.
