these are a cross between a Samoa cookie and a doughnut, they have toasted coconut and caramel topping and then dipped in chocolate like the girl scout Samoa cookie.
they tasted amazing, i used an English recipe for the doughnuts and its measured in grams so you will need scales but the caramel ingredients are measured in cups, i made the caramel in the microwave for quickness but you could even buy caramel candy and melt it and use that mixed with 2 tbsp of milk.
recipe
doughnut
250g strong white flour
25g caster sugar
20g butter
1 egg
1 sachet of fast action yeast (usually 7g)
2 g salt
75ml warm milk
65ml water
in a mixing bowl add the flour, sugar, salt and yeast, then warm the milk a little, not too hot or it will scald the yeast.
add the egg, butter and milk and combine.
add the water gradually to make a wet dough then tip out on to a floured surface and knead the dough for about 10 minutes until soft and smooth.
place in an oiled bowl and cover with cling film,
leave to double in size for 1 hour
tip out on to floured surface and roll out and cut out doughnuts. i used two circle cutters.
loosely cover with a bag and let double in size again for half an hour,
heat oil, i used a deep fat fryer, if using a pan heat oil to 180c,
fry for about 3 minutes on each side,
leave to cool
caramel
1/4 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup light corn syrup
1/2 cup sweetened condensed milk
using a microwave,
add all the ingredients together in heat safe bowl. cook for 6 minutes stopping every two minutes stirring each time.
stir and pour half in to lightly greased dish and the other half add with half of the toasted coconut

300g
line a baking tray with parchment paper and spread the coconut out thinly and toast for 10 minutes until brown in a preheated oven at 180c
add some caramel to each doughnut, then add the coconut caramel mixture pressing it on,
i then sprinkled on some more toasted coconut,
chocolate
melt 200g of chocolate and dip the bottom of the doughnuts into it and place them on a piece of baking paper,
then drizzle the rest of the chocolate over the tops of the doughnuts
