i have so many apples to use up as my mum went to an orchard near where we live and got a rucksack full of them.
she dropped over a shopping bag full for me to use.
i thought i would be nice to make a sweet pretzel with apple puree in the dough and a cinnamon sugar coating.
recipe
350g plain flour
200g strong white flour (bread flour)
1 7g sachet of fast action dried yeast
4 tbsp sugar
300ml warm water
1 tsp salt
25g butter
1 cup apple puree (2 or 3 apples pealed and cored and pureed in a blender)
topping
2 tbsp cinnamon
half cup sugar
water bath
2 cups water
5 tbsp baking powder
in a bowl add the flours, salt and butter and apple puree and rub it in until it resembles bread crumbs.
add the sugar and yeast and then pour over half the water and mix with your hands until it starts to come together then add the rest.
tip out on to a floured work top and knead for 5 minutes until smooth.
oil a large bowl and put the dough in and cover with cling film and leave to rise for 1 hour.
tip out on a floured work surface and knock out the air.
divide the dough in to 12 for small or 8 for large equal balls and roll out the dough into long ropes and fold into the pretzel shape and place on an oiled tray.
preheat oven to 180c
in a pan add 2 cups of water with about 5 tbsp baking powder and bring to boil
lower in the pretzels, bath one at a time for a minute each and place back on to the baking tray.
brush with beaten egg and sprinkle over cinnamon sugar
bake for 20/25 minutes
