    alfajores dulce de leche cookies

    alfajores consist of two layers of thin sweet pastry filled with dulce de leche,
    they are popular in south America,
    i rolled them in some coconut to finish them off.
    they tasted really good, because of the amount of butter they were crumbly like shortbread.
    you can either buy the dulce de leche or boil a tin of condensed milk for 8 hours in a pan of water or put it in a jar in a crock pot with water for 10 hours. I have also came across a faster method using the oven, you put the condensed milk in a heat proof bowl and place it in a tray of water and put it in the oven at 220c for 1hour 30 minutes

    recipe
    pastry
    250g/9oz plain flour
    25g/1 oz icing sugar
    1 tsp salt
    225g/8oz butter
    filling
    dulce de leche
    1/4 tsp cinnamon
    1/4 tsp cloves
    1/4 tsp nutmeg
    icing sugar
    in a food processor add all the pastry ingredients and pulse until combined and it forms a smooth dough.
    wrap in cling film and refrigerate for an hour or two,
    preheat the oven to 180c 350f
    flour the work top and roll out and cut out circles and place on baking tray,
    place in the fridge while the oven heats up.
    bake for 10/12 minutes
    let cool and sprinkle with icing sugar,
    mix the spices with the Dulce de leche and add a spoon full to each cookie and sandwich another on top.
    roll in coconut if you like.

      And I had no idea about how to make dulce de leche – well I have never even used it before but have always found the recipes that uses it interesting and fun to try one day.

      In Brazil, we make dulce de leche cooking the can of the condensed milk in the pressure cooker for about 40 minutes.
      Do not forget to fill the pressure cooker with water.
      The amount of water has to cover the can.
      You must have to wait the can chill before opening.

      Hi Aimee,

      Alfajores and dulce de leche are Argentinian just like me 🙂 We would normally replace half the flour in your recipe for cornflour, this way the biscuits turn out fluffy and super soft. We also have a type of dulce de leche with a firmer consistency for these type of uses called "Repostero". I live in the UK and there are some websites here that sell it for a really good price!
