    candy stripe meringues

    i thought these meringue would be cute for winter as they look like candy canes,
    i found a new method that makes the mixture super thick and glossy,
     i baked them so they were still soft in the middle i think they taste better like that,
    the recipe is easy to remember just double the sugar to the amount of egg whites,
    you will need weighing scales and a stand mixer.

    recipe
    150g egg whites
    300g sugar
     
    heat the oven to 180c
    line a tray with baking paper and add the sugar to it, place in the oven for 5 minutes to heat the sugar,
    in the bowl of a stand mixer whip the egg whites until stiff peaks start to form,
    once the edges of the sugar starts to turn golden, take out sugar and turn oven down to 100c, then add the warm sugar a spoonful at a time, mix on a high speed for about ten minutes.
    the mixture will be really thick and glossy.
    turn a piping bag inside out holding onto the tip, place on a bottle so it is stood up right, then with a paintbrush take some gel food colouring mix with a drop of water, paint lines inside the piping bag
    then carefully add the mixture and turn the bag the right way, cut off the tip and pipe mounds onto a line baking tray
    cook for 40 minutes until they can be removed from the tray with their bases in tact.

      My son is a absolute meringue addict (sugar rush :-/) he would love these at Christmas. I normally make regular ones, just a lick of food colouring inside the bag eh – I think I could manage that!
