i thought it would be fun to change the traditional smores flavours into a festive treat,
i made eggnog flavour marshmallows with rum and nutmeg, then i made gingerbread style graham crackers.
they would make a great adult gift for Christmas, if you want to make them child friendly you could always make peppermint marshmallows instead and swap the rum for mint extract.
marshmallow recipe
3 envelopes of gelatin
1 cup of water
1 cup light corn syrup
1/4 cup sugar
1/2 tsp nutmeg
1/3 tsp salt
1/2 tbsp run extract, i just used 2 tbsp dark rum
1 tsp vanilla extract
1/4 cup confectioners sugar
1/4 cup cornflour
grease a deep sided tin then mix the corn flour and confectioners sugar in a bowl and sift into the tin ready for the marshmallow.
in the bowl of a stand mixer add the gelatin and half a cup of water, add the other half of the cup in to a pan with the corn syrup, and sugar
stir till sugar dissolves and then clip on a candy thermometer,
leave mixture with out stirring until it reaches 115c
(have a cup of water and a pastry brush on hand to wipe down the sides of the pan while you are waiting) about 6/8 minutes.
if you drop some of the mixture into the water and it forms a ball its ready, you don’t want it to get to the hard ball stage so keep an eye on the temperature,
turn on the mixer and start pouring the mixture in at a slow steady stream, turn the mixer up and leave it for about 6 minutes it should of tripled in size and started pulling away from the sides, add the vanilla, rum and nutmeg and continue mixing, then quickly pour into the tin and leave to set for a few hours or over night
to make graham crackers
1 1/4 cup plain flour
1/2 cup corn flour
1/2 cup wholemeal or rye flour
1/2 tsp salt
1/4 tsp baking powder
1/4 cup brown sugar
7 tbsp butter
1/4 cup honey
1/4 cup milk
2 tsp ginger
1 tsp cinnamon
1/2 tsp nutmeg
heat the oven to 180c/ 350f
mix the flours together with sugar, salt, baking powder and spices the rub in the butter, add the honey and milk and knead together,
turn out onto floured surface, roll out thinly and cut into squares and prick with a fork so they don’t rise,
place on a lined tray in the fridge or freezer while the oven heats up
bake for 12 minutes.
