i wanted to make something festive so i decided to make this gingerbread style swiss roll.
i added ground ginger and stem ginger and orange zest so its full of flavour,
i added orange to the cream cheese too.
it tastes just like a gingerbread cake.
recipe
100g self raising flour
100g sugar
4 eggs
2 tsp ground ginger
1 tsp cinnamon
1 tbsp orange zest
1 tbsp chopped stem ginger
1 tbsp cocoa powder
preheat oven to 200c
line a swiss roll tin with baking paper
in a bowl whip the eggs and sugar until the mixtures thickens, then sift in the flour, ginger and cinnamon and cocoa and fold in gently, then chop the stem ginger in to small pieces an add it into the mixture with the orange zest.
once it is combined pour it into the baking tin and spread it out,
bake for 10 minutes or until it starts shrinking away from the tin and springs back when touched
once cooked turn out on to a damp tea towel and gently peel off the baking paper,
roll up the sponge like a roulade and leave to cool,
the damp tea towel helps stop it cracking.
make filling
200g cream cheese
50g butter
1 tbsp orange zest
400g icing sugar
cream the butter, cream cheese and orange zest together the add the icing sugar and mix until smooth
once the cake has cooled down gently unravel it and spread the filling out and roll it back up tightly and cut the ends off, and dust with icing sugar.
