i decided to add rosemary to this gratefruit sponge cake to add some extra flavour, i dont genually like grapefruit but it tastes really nice in a cake,
i decorated it with fresh rosemary and sifted icing sugar over it.
recipe
360g butter
360g sugar
360g self raising flour
4 eggs
juice of half a grapefruit
juice of half a grapefruit
2 tbsp grated zest
1 tsp baking powder
4 tbsp milk
1/4 tsp chopped fresh rosemary
preheat the oven to 180c/ 350f
cream together the butter and sugar until fluffy, then add the eggs one at a time, sift together flour and baking powder and a pinch of salt, and add to the wet mixture, add the juice, zest and milk and combine, spoon into two tins, i used two small sized ones as i like the look of a teird cake, level off the cake batter and bake for 35 minutes.
if using several shallower tins it may need less time.
let cool
slice off the tops to level out the sponge
make frosting
250g butter
400g icing sugar
juice of half a grapefruit
mix all ingredients together until smooth,
using a spatula add it to the largest cake first and smooth out.
then add the small cake on top and ice that one,
decorate with rosemary and some grapefruit zest.
