    red velvet cake with white chocolate cream cheese frosting

    this cake is a perfect celebration cake for the holidays, i used small cake tin so i could make it with different size layers so it looked more of a centrepiece, its fine to make it in two 9 inch tins though if you want.
     i decided to make cream cheese frosting with white chocolate in to cover it with.
    i cut the top parts off the sponge so i was level and decided to use it to decorate the cake with.

    recipe
     2 1/2 cups sifted all-purpose flour,
    2 teaspoons salt
    1tsp baking powder
    1/4 cup natural cocoa powder
    1 ounce red food colouring
    1 1/2 tablespoons water
    1 cup (2 sticks) unsalted butter,
    2 cups sugar
    3 large eggs
    1 1/2 teaspoons natural vanilla extract
    1 cup buttermilk
    1 tbsp white wine vinegar
    1 tsp bicarbonate of soda
    preheat the oven to 350f/180c
    grease and line your tins
    in a bowl cream the butter and sugar together then add the eggs one at a time,
     in a small dish add the food colouring, cocoa, water and vanilla and mix into a paste (i only had ruby red colouring rather than bright red)
    add this to the mixture and mix in,
    sift in the flour, salt baking powder and add to mixture, then add the butter milk.
    in a dish mix the vinegar and bicarbonate of soda (it will fizz up) add this to the cake mixture and mix in so its evenly distributed.
    pour batter into tins, level out
    bake for 30 minutes
    let cool, upside down to level it out,

    make the frosting
    2 100g bars of white chocolate
    300g pack of cream cheese
    100ml double cream

    break up chocolate and melt chocolate in a heat proof bowl over a pan or boiling water and add the cream, mix in to the cream cheese until smooth.
    slice the tops off the small cakes, keep this for the sprinkles,
    add some frosting and sandwich the two cut sides together so the cake is perfectly flat on the top and bottom, slice the larger cake in half and sandwich some frosting and turn upside town so the flat edge is facing up,
    layer the cakes together using frosting, (this cake is not huge so it didn’t need support)
    add the frosting around the cake and smooth out.
    using the pieces of the cake that were cut off make into crumbs and add around the bottom of each layer for decoration.
