i thought it would be great to invent this soft pretzel flavour for Christmas,
i added cocoa and orange zest into the dough and then decorated them with melted chocolate and orange zest, they tasted really good.
1 American cup of flour is 150g so i have worked it out roughly
recipe
350g 2 and 1/4 cup plain flour
200g 1 and 1/4 cup strong white flour (bread flour)
1 7g sachet of fast action dried yeast
4 tbsp sugar
300ml warm water
1 tsp salt
25g 2 tbsp butter
3 tbsp cocoa
2 tbsp orange zest
2 tbsp orange zest
topping
dark chocolate
Orange zest
Orange zest
water bath
2 cups water
5 tbsp baking powder
in a bowl add the flours, cocoa, salt, sugar, butter and orange zest and rub it in until it resembles bread crumbs.
add the yeast and then pour over half the water and mix with your hands until it starts to come together then add the rest.
tip out on to a floured work top and knead for 5 minutes until smooth.
oil a large bowl and put the dough in and cover with cling film and leave to rise for 1 hour.
tip out on a floured work surface and knock out the air.
divide the dough in to 12 for small or 8 for large equal balls and roll out the dough into long ropes and fold into the pretzel shape and place on an oiled tray.
preheat oven to 200c
in a pan boil 6 cups of water with 5 tbsp baking powder,
put each pretzel in the water for under a minute each and then return to the tray, brush with beaten egg and sprinkle on some granulated sugar
bake for 25 minutes

How much baking powder is in the pretzel? I see that 2 Tbls. are in the water bath, but where are the other 3 Tbls? The recipe says in the ingredients – 5 Tbls.baking powder.
They look delicious and I hope to hear from you soon about the baking powder.

They look really great! I was wondering how is the texture. It is nice and soft as the regular pretzel or it is more crunchy?
