wow, this was one of the most amazing things i have ever tried, it was so easy to make too and is a great Christmas gift idea,
this recipe makes one large one or two smaller ones, which i decided to do.
it looks like a salami but it tastes a cross between ganache and rocky road Just like a fridge cake.
recipe adapted from nigella lawson
250g chocolate is used 100g 80% cocoa and 150g milk chocolate
250g amaretti biscuits or tea biscuits i used digestives
100g unsalted butter
150g caster sugar
3 eggs
2 tbsp amaretto or vanilla extract
2 tbsp cocoa
75g pistachios
75g almonds
50g hazelnuts
50g dried cranberries
icing sugar
melt chocolate in a microwave or over a pan of boiling water,once melted set aside
in a bowl add butter and sugar and cream until soft and fluffy, then add the eggs one at a time
add the cocoa to the chocolate and then add it to the mixture,
mix well then add vanilla extract,
break up biscuits into chunks and add it to the mixture with the nuts and cranberries and stir it together.
place bowl in fridge for 30 minutes
cut off some cling film and lay it on the work top and then add the mixture to it and roll it in to a salami shape,
twist the ends and put in the fridge over night
unwrap the salami and rub on some icing sugar,
i then tied it like a salami, i wrapped it in some cheese cloth and used some bakers twine and tied it up.
The original recipe said to use 3 eggs uncooked. If you are worried about eating uncooked eggs whisk them over a pan of boiling water until they have thickened then add them to mixture.

The recipe method says in a bowl, add butter, sugar and cream, but there’s no cream in the ingredients list, is there cream or not please? Thank you!
It means in a bowl at the butter and sugar and “cream together” (using the creaming method) that just means add the butter and sugar and mix together hope that helps xxx
