i love lemon and so does my family, its an ingredient i know will go down well with everyone.
i decided to add poppy seeds to this pound cake to just to add some texture to the sponge
recipe
250g flour (2 and 1 / 4cups)
250g sugar (1 and 1/8 cups)
250g butter (2 sticks)
4 eggs
1 tsp baking powder
1/2 tsp salt
juice of 1 lemon
peel of 1 lemon
3 tbsp poppy seeds
preheat oven to 350f or 180c
in a bowl cream together the butter and sugar until thick and creamy, add the eggs on at a time incorporating each one before adding the next one.
then add the lemon zest and juice.
sift in the flour and baking powder and salt and mix together then finally add the poppy seeds, mix so they are spread evenly throughout mixture and pour into a greased tin,
bake for 45 minutes
let cool for 10 minutes then make icing
mix the juice of half a lemon and icing sugar together until thick but pourable and drizzle over the cake
